Time passed by so fast today. It must be because we went out in the morning to check out the requirements for our kids preschool , had a very heavy buffet lunch and came back only in the afternoon. I didn’t realized that it’s already 5:30PM and almost time to cook dinner. But as of now, I’m still so stuffed from lunch that it’s quite difficult to think about food, much less getting up and preparing dinner.
I would have search through our fridge, see what we have in their and then look over some sites in the internet to look for Quick easy dinner recipes. Hope I could find some delicious and simple recipes ( with my available ingredients of course). If not then, I’ll have to just simply stir fry the chicken with some vegetables. I’m sure I have some chicken in the freezer since we just bought them yesterday. As for the vegetables, errr.. I’m not so sure if they’re still fresh and crunchy since we bought them several days ago already. If not, then I’ll have to cook up my kids favorite and the easiest dish to make for me. Thai chicken fried rice! Yes, here are some tips for cooking Thai Fried rice. I’ve discovered this in the net, tried out and it really turned out to be yummy!
Tip number 1 : You have to fry the meat you want to mix with your fried rice and set aside. If you wish to add egg then, scramble the egg first and set aside.
Tip number 2: After frying the meat, leave a little bit of oil in the pan and pour in 2 tablespoons of soy sauce and 1 tablespoon of Fish sauce ( this proportion is good for 2 cups of rice). And only then you put in the cooked rice and mixing them very well.
Tip number 3: When cooking, you have to make sure that you fire is set on high fire. And yes, to avoid your rice from burning, you have to be quick in turning the rice over.
Tip number 4: And after putting the rice in the pan, only then you put in the other ingredients like thinly sliced tomatoes, onions and if you wish, other vegetables. Season with salt and white ground pepper and cook for a minute or 2 and serve it piping hot.

Today we went to the nearby Thai school where we will be enrolling our kids for this school year. Our kids are very happy on their new school and they’re quite excited for next month too. But I won’t raise my expectations too much especially with my li’l boy who will be going to school for the first time. He’s only two and half years old. I’m just hoping and praying that his period of adjustment would be fast and that he will really love to regularly go to school.
With him going to school, I can concentrate in homeschooling my li’l girl in the afternoons and do extra work for the center or at home in the mornings. With my kids going to school, it also means getting up early and thus going to bed early too. Hmm.. I’m excited for busy life ahead..
This will actually be quite a change of years of being 24/7 with the kids where I can’t do anything much except to be watching over them, keeping them occupied and seeing them mostly BORED at home.

We don’t have a lot of projects for this year since we’ve already had major spending when we did a lot of traveling last year plus we moved house early this year. And if I look around, I think we don’t need house stuff urgently. I still dream of that espresso machine though ( hmm, I could already smell the delicious coffee aroma here) but that can wait. My Hubby and I have been seriously been thinking of doing up our car. So, we’re making that as our major project for this year.
Aside from the oil leakage, our car also have some minor problems that needs to be addressed. Some parts have to be welded since there are a few holes around it. Some parts also have to be straightened as it has been knocked by another car a year ago. And lastly, we have to repaint it. I’m not sure how much this major repair and ‘face lift’ will cost but I sure hope that the cost won’t be equivalent to buying another second hand car! LOL! Yeah, it will be nice to buy another car but as of now we will have to concentrate in saving up to fix our present car and maybe add some car accessories later. But who knows, we might miraculously receive a newer car ( compared with our present car) of perfect condition. We actually didn’t buy our car. It’s an unexpected blessing from God though our friend.
Anyways, hopefully we will be able to accomplish our project for this year and only then we can proceed to another family project. What would that be? Hmmmm.. would my dream espresso maker be a good idea? Nah! I guess, that would have to wait for quite some time since I’m the only one who loves coffee and will get to enjoy that.
